Patate
The potato (Solanum tuberosum L.) is a herbaceous plant belonging to the Solanaceae family, native to South America. It is one of the most important vegetables grown in horticulture, due to its organoleptic characteristics and versatility in the kitchen. It is currently widespread in numerous varieties characterized by specific shape (round or long), pulp color (white or yellow) and skin color (light yellow, dark or red).

- The leaves are pinnate-compound, formed by 7-9 leaflets of different sizes and alternate. The margins can be smooth or serrated.
- During the early stages of development, the stems have an erect habit and are 60 to 150 cm tall; when mature they assume a prostrate habit and often turn yellow.
- The inflorescences are borne in terminal position and are made up of pentamerous flowers. These are of a color that varies from pure white to light violet, they have yellow stamens.
- The tubers, the edible part of the plant, develop from the swelling of the terminal, hypogeal part of the long underground stolons. The swelling is formed for the transport and accumulation of photosynthesized carbohydrates from the aerial part of the plant, when it reaches maturity. The tubers, therefore, act as a reserve organ.
NUTRITIONAL CHARACTERISTICS
Potatoes are a low-calorie food: 100 g contain only 89 kcal. Steamed or boiled, they are a food almost completely devoid of fat, while they provide a good quantity of carbohydrates, about 19% of the weight, and a minimal quantity of proteins, 2% of the weight; they are also a source of fiber: 3 g per 100 g. They provide a significant quantity of vitamin C but also a good quantity of vitamins B1, B6 and folates. With regard to the content of mineral salts, the contribution is interesting
of potassium; they are naturally sodium-free.
